Healthy One-Pot Dinner Recipes! Pizza Pasta, Taco Quinoa, + BONUS Recipe! – Mind Over Munch

► ONE POT TACO QUINOA:
2 tsp oil
2 garlic cloves, minced
½ cup onion, chopped
1 bell pepper, diced
1 cup quinoa, raw
1 ½ cups broth
1 can (15 oz) of black beans, drained & rinsed
1 can (14 oz) of tomatoes
1 can (15 oz) of corn, drained & rinsed
1 ½ tsp chili powder
½ tsp cumin
¾ tsp salt
⅛ tsp black pepper

In a pot over medium warmth, sauté onions, garlic and bell peppers in a little bit of oil.
Add quinoa, beans, tomatoes, corn, chili powder, cumin, salt and water.
Bring to a boil. Turn right down to a simmer, cowl, and permit to prepare dinner till quinoa is cooked by way of, round 20 minutes.
Serve and garnish with avocado, lime juice, cilantro, or cheese.
Yields ~eight cups (four servings).
